There’s something satisfying about opening a warm lunch during a chilly workday. This creamy Cajun tofu pasta recipe delivers bold flavour, is easy to prep in under 30 minutes, and stays hot in our Citron Thermos Food Jar for hours.
Ingredients you'll need
- 1 block firm tofu
- 1 tbsp Cajun seasoning (+½ tsp extra)
- 1 onion, diced
- 1 capsicum, sliced
- 2 garlic cloves, minced
- ¼ cup sun-dried tomatoes, chopped
- ½ cup chopped tomatoes
- ¼ cup cream (or plant-based cream)
- Salt to taste
- 80ml pasta water
- Pasta of choice
How to make it
- Pan-fry tofu with Cajun seasoning for 5–6 minutes. Set aside.
- In the same pan, cook onion, then add capsicum, garlic, sun-dried tomatoes, and remaining Cajun seasoning.
- Add tomatoes, cream, and a pinch of salt. Simmer while pasta cooks.
- Reserve some pasta water, drain, and combine with the sauce and tofu.
- Stir well and serve hot in your Citron food jar.
